Brownie and Marshmallow Ice Cream
Description
Is there anything better than brownies and ice cream? I'm sure you'll agree that together, they are divine. So I decided why not mix my homemade brownies with my no-churn chocolate and vanilla ice cream, and oh boy, did that turn out amazing! And the mini marshmallows are just what this ice cream needed to make it luxuriously over the top. So try this brownie and marshmallow ice cream, where layers of no-churn milk chocolate and vanilla ice cream are liberally interspersed with fudgy brownie chunks and marshmallows.
Ingredients
Method
- Break the chocolate into chunks in a microwave-safe bowl. Microwave it in 15-second increments to melt the chocolate. Set the melted chocolate aside.
- Add cream, salt, xanthan gum, and vanilla extract to a large bowl and whip it soft peaks form.
- Next, add the condensed milk and gently fold everything until well combined. Divide the ice cream base equally into two bowls. Add the melted chocolate to one bowl and mix till combined.
- Sprinkle a third of the brownie bits and marshmallows into a freezer-safe container.
- Pour the vanilla ice cream into the container. Next, sprinkle another third of the brownie bits and marshmallows on the ice cream layer. Pour the chocolate ice cream layer over the brownies and marshmallows. Finally, top off with the remaining brownies and marshmallows.
- Swirl the ice cream around with a clean knife to distribute the brownies and marshmallows gently and create a marbling effect between the vanilla and chocolate ice cream. Do not overmix to prevent the brownies from breaking.
- Store in the freezer until the ice cream sets (approximately 8 hours). Once the ice cream sets, grab a spoon and enjoy!
